Pasta-Mozzarella Assistant Manager (Administrative)
Our Company is growing with new stores coming to Long Island soon! We are in need of an Assistant Manager for our Pasta/Mozzarella Department for our busy North Babylon Store!
The Assistant Production Manager for our Pasta/Mozzarella division is responsible for making fresh pasta and mozzarella according to Uncle Giuseppes authentic Italian recipes. This individual utilizes fresh mozzarella curd to heat, stretch by hand and make house-made mozzarella. Additionally for pasta production, the Assistant Production Manager assists the Production Manager to manage all aspects of the process: stretch by hand, create various molds and doughs to be turned into authentic house-made pasta. The Assistant Production Manager engages all senses: tastes, smells, feels, listens and observes all characteristics of each batch of pasta and mozzarella to maintain and elevate quality.
Responsibilities
Records daily the weight of ingredients used, batch sizes, and amounts transferred to other outletsMakes variations in time cycles and ingredients used as necessary for succeeding batchesCares for and handles products with careful attention to quality control and waste managementWeighs, packages and labels pasta and mozzarella lab offeringsStocks display refrigerators neatly, accurately and in a timely mannerAssists the Production Manager with hiring, training and scheduling, in addition to assisting with the overall operations of the departmentProvides guest service and information on pasta- making and mozzarella-making process to guestsCleans workstation thoroughly following food safety best practicesEnsures collateral supplies are in stock and being utilized properly in the labOther duties and functions as assigned
Requirements
HS Diploma or equivalentMust have 3+ years of experience working in pasta/mozzarella production, making products from scratch and by handMust have working knowledge of all industrial equipment used in the department and able to train staff on usages and proper cleaning techniquesGood communications skills with excellent attention to detailMust speak, read and communicate in the English languagePrevious cheese making and/or food production experience preferred
Working Conditions
Most of the time is spent moving about continuously on hard surfaces. There may be a need to frequently position oneself to examine and/or scan merchandise, including bending, climbing, crawling, handling, pulling, reaching, and stooping.May require lifting objects up to 30 pounds. May require lifting and moving heavy and/or awkward objects more than 30 pounds with assistance.Usually in a comfortable indoor environment surrounded by moving machinery and/or loud equipment that may require shouting in order to be heard. There could be exposure to temperature extremes from freezers, ovens, and/or coolers.There may be occasional exposure to cleaning agents.
